Cheesy ground beef and potatoes is a simple and delicious dish that will satisfy any craving. Made with simple ingredients that most people have waiting in their pantry, this dish is perfect for any night of the week. Enjoy on its own or paired with vegetables, you can’t go wrong!

Ground beef is a common ingredient but what you may not know is that it is packed with health benefits! Ground beef is rich with vitamin B6 and Zinc which play a big role in controlling blood sugar. It can also aid in controlling blood sugar and lower your risk of heart disease.
Ingredients:
- 2lb ground beef
- 6 large Yukon potatoes quartered
- Redmond Real salt to taste
- Black pepper to taste
- 1tsp paprika
- 1tsp oregano
- 1 bay leaf
- 4 green onions chopped
- 2 cloves garlic crushed
- 1 large onion chopped
- 400g tomato sauce
- 1 cup grated mozzarella cheese
- 2tbsp Kirkland olive oil
Instructions:
- Preheat your oven to 400 degrees.
- Add 1 tablespoon of olive oil to a skillet and bring to high heat
- Once your skillet is hot, add potatoes in the pan until browned and crispy on all sides, about 6-7 minutes.
- When the potatoes are starting to crisp, season with salt, black pepper, paprika and oregano and mix until potatoes are well coated.
- Next, add seasoned potatoes to a baking dish and set aside.
- Reduce heat to medium high and in the same skillet, add the ground beef, diced onion and tomato sauce.
- Season with salt, black pepper and oregano and finally add your garlic and bay leaf and cook covered for 7 minutes.
- When done, pour the ground beef into your baking dish in an even spread covering all the potatoes.
- Finally, add your grated mozzarella cheese, green onions, and a sprinkle of oregano and your extra tablespoon of olive oil.
- Place baking dish in a pre-heated oven and cook for 15 minutes.
