CREAMY CHICKEN BREAST

This creamy chicken breast is a quick and easy one-pan recipe packed full of flavour and healthy ingredients. It is low in sodium but packed with a punch of flavour from jerk seasoning. It can be enjoyed on its own, or over rice or pasta for a quick dinner.

Why Should You eat chicken?

Chicken also contains tryptophan, an amino acid that has been linked to higher levels of serotonin (the “feel good” hormone) in our brains.

Ingredients:

  • 4 boneless chicken breast
  • 1tsp kosher salt
  • 1tsp black pepper
  • 2 garlic cloves crushed
  • 2tbsp Kirkland olive oil
  • 2tbsp butter
  • 1 large yellow onion diced fine
  • ½ cup of chicken broth
  • ½ a lemon juiced
  • 2tbsp chopped parsley
  • ½ cup heavy cream
  • 1tsp jerk dry seasoning

Instructions:

  • Begin by making shallow cuts into the top of each chicken breast, season with salt and black pepper, on both sides.
  • Place the garlic into a skillet along with the olive oil, butter and cook over a medium low temperature until the garlic is fragrant
  • Increase heat to a medium high and add chicken to your pan. Cook until brown on both sides, about 5-7 minutes on each side.
  • When the chicken is browned, remove from pan and set aside.
  • Place butter and onions into your pan and sauté for 5 minutes,
  • Next, add chicken broth, lemon juice, chopped parley, salt, heavy cream and jerk seasoning.
  • Bring to boil for 2 minutes, until all ingredients are incorporated. Re-add chicken breasts
  • and turn down heat to low, cover and cook for 20 minutes
  • serve with rice, pasta or enjoy on its own.
